 As a cornerstone of Mexican gastronomy, famous for its bold flavours, rich stews and agave spirits. Think slow, rich sauces that cling to everything they touch, bright hits of citrus, a little smoke in the air, and just enough heat to keep things interesting. It’s the kind of cooking that has been passed down, argued over, and perfected, plate by plate.

This month, we’re leaning into tradition while keeping it unmistakably us. Expect nods to classics like birria and pozole, built out with housemade everything, punchy salsas, and those extra little touches that turn “just one more bite” into “okay… one more round.”

And yes, we’re pouring to match. Tequila and cocktails that hit that sweet spot between fresh, sharp, and dangerously easy to keep ordering.
